BREAKFAST BURRITO



The age old question.. breakfast or brunch? A question I find myself asking most Saturday mornings. Whichever the answer is, a classic Mexican themed breakfast burrito is the ideal option.


Spice from the sausage and creaminess from the guacamole add to the differing flavour and texture profiles happening within this wrapped tortilla of goodness. The addition of the beans add some fibre and volume to the dish, and the addition of paprika to the eggs gives a subtle smokiness to them.


Perfect for early morning, late afternoon or a treat after a long day - the crucial element is not to be greedy and overfill the tortilla. A fist size amount of filling usually is the perfect amount and allows the burrito to be rolled without any disasters happening.

Ingredients:

- 1 tortilla wrap

- 2 eggs

- 1 avocado

- 30g onion

- 2-3 tomatoes

- ½ lemon

- 1 tbsp Greek Yogurt

- 30g Chorizo

- 30g Cheese

- Paprika

- Kidney Beans


Instructions:

On a frying pan, fry the chorizo until browned and crisp. Remove from the pan and add the beaten eggs with a pinch of paprika. Scramble for 1-2 minutes and remove from heat.


In a bowl, add the avocado, diced onion, yogurt, lemon juice and mash. Season well with salt and pepper.


Build the Burrito: In the fresh tortilla, add the guacamole, chorizo, egg, beans and topped with grated cheese.


Optional: Toast on the pan to get a golden colour and serve with some extra guac or salsa! #BreakfastBurrito
